I had my interview on the same day during the 2-4 pm business lull. The GM interviewed me first. Then, two days later, I had a second interview with the AGM, who is the one that hires people. Different managers interview differently, so there isn't one set way. Just know they're open 11 am to 2 am all year, including holidays, so scheduling can be tough if you have family. It's a good fit for college students or people who work late. They only take reservations for parties of 8 or more, and sometimes they check in after a table has been seated to make sure guests are happy.

I went in person to apply and they let me talk to the manager at the time and he asked me about my availability and if I had experience. Since I said I was available throughout the year because I was going to commute to school, he told me to come back the next day to get interviewed by another manager. She asked questions like why I wanted to work there, and how I would work in that kind of setting, and examples of how I handled problems. She told me she was going to call me back, but I'm pretty sure they say that when you're not hired.

I applied for the hostess job on SnagAJob, then I called to see where I was in the process. The hiring manager told me to reapply on the company website because it was easier for them to view applications and to call them back after I did that. I called back that same day and she told me to come in for an interview the next week. When I went in for the interview, it was going well until I mentioned I was going away for college. She apologized for making me wait and said they were looking for people who could work permanently, not just for the summer.

A friend who works at the restaurant referred me for the hostess job. I went in for a single interview with a manager. It was pretty quick, under 20 minutes. The questions weren't too tough, mostly about personality since it's for a hostess role.
