Applied as a walk-in and was told they like to interview everyone after you've filled out an application. Waited an hour to talk to the manager, but the hostess and bartender were very kind and offered me a drink. The manager seemed rushed at first but then became delightful. They were concerned about "years of experience" potentially meaning "bad habits", but emphasized their extensive training. The manager explained the restaurant's concept and expectations. They asked very few questions about me. After about 15 minutes, I felt motivated and ready to learn. The General Manager then came back, shook my hand, asked a few more questions about personality and work ethic, and I was hired on the spot. It seemed like they wanted me to understand who they were, and I got the job.
