I was asked to talk about my undergraduate research project, and the entire interview was spent discussing my research area and current research work. Essentially, if they think you have a solid research background or the necessary fundamental knowledge, they'll extend an offer. It's worth noting that a research project isn't a strict requirement; in my situation, having one was enough.
