Famous was hiring for a restaurant manager position at their new location. I went in with my resume, a letter of interest, references, and a strong desire to work. I told the hiring manager I was looking for a management role. He took my information and met with the General Manager (GM) who was also interviewing candidates. I spoke with the GM for about 45 minutes. We discussed my experience as a restaurant owner, my over 20 years in management, my career goals, and some P&L questions about controlling expenses. The GM was very pleasant and professional, even though the interview felt relaxed. He mentioned he had one other candidate he was considering and would let me know his decision the following week. It's been 6 weeks since that interview, and I haven't heard back, so I can pretty much guess how that turned out.
- Regarding an operation like this, what would you deem an acceptable expense ratio?

It was a pretty easy interview process, though not the most professional. The director seemed like they might have been hungover, and the manager was late for our meeting, even though the restaurant wasn't even open yet. The tour of the kitchen wasn't great, it wasn't very well-maintained. They ended up taking over two weeks to get back to me, by which time I'd already accepted a job somewhere else.
- Would you be able to attend a 7-week training program in another city?

This interview process took months, it was very long and drawn out. The first manager who interviewed me was fired, then the owner hired me after a few phone interviews and a trip out of state. It was a very odd and drawn out process.
