First, there was a basic face to face interview. They asked about my work history, my relative experience, and some personal questions too, plus questions about my future plans. Then came a knife inspection. They looked at each of my sushi knives and tested the sharpness, overall quality, and how I upkeep them. After that, there was a sushi skills test.

I had a chat with the general manager and the head chef. It was pretty laid-back, but they threw a bunch of 'what if' questions at me. They're looking for people willing to start from the bottom if you don't have experience in this kind of restaurant setting. They really value corporate restaurant experience.

The interview happened at the restaurant when it was closed, in a private room. They kept asking about my long hair and seemed worried. I said I'd wear a hair net, but they still seemed bothered. I think my gender presentation made them not take my application seriously.
