The restaurant's general manager was really nice and easy to talk to. I had to complete several tests, but it was worth the effort. I remember there was a basic math test, a personality assessment, and then a one-on-one interview. During the one-on-one, the manager asked me straightforward questions about serving, like 'what would you do if...' type scenarios. If you're capable, it's very simple. Just be confident, smile, and be outgoing, and they'll definitely like you.

The interview process was a bit unusual. It began with a standard phone introduction where I discussed my past experiences and potential contributions. Following this, I was invited for a second interview, which was an unpaid 4-hour 'stage' to shadow the crew and ask questions. A document outlined that the goal was to spend at least 30 minutes with the GM or managing partner for a tour and a discussion on their operations. Upon arrival, I observed the GM handling opening procedures due to a staff shortage, and then shadowed a server while the GM conducted other interviews. I spent about an hour with the banquet/catering coordinator assisting on the expo line due to the staff shortage. After that hour, I inquired about touring the bar and shadowing the bartender, given my application for the beverage manager role. However, I had limited interaction with the bartender as they were busy setting up the patio bar, which was opening that day, and ended up juicing fruit. My stage ran from 10 am to 2 pm, encompassing their opening and lunch rush. It seemed odd to be tasked with asking staff about their employment during a busy period. I felt I had minimal interaction with the GM, and suspected the stage was due to staff shortages. I would have preferred a 1-hour stage during a slower period, followed by a 1-hour meeting with the GM and Assistant Manager to address my questions, and then a final 30-60 minute session with the staff. I felt more like I was interviewing them.
