The interview was informal, with standard interview questions asked. We sat in a booth of the restaurant while I talked with the manager on duty at the time. The managers are looking for passionate, talkative, and generally enjoyable people to become servers, so try to highlight those aspects of your former employment/experience.

I filled out an application and then was interviewed for the Waitress/Bartender position on the spot. It was during the winter, which is a slow time for this beachy, outdoor bar. I talked directly to the owner. He asked about my past jobs, why I wanted to work there, and my goals for the position, plus my hours. Pretty standard interview questions. The owner seemed articulate and knew what he was looking for, and he seemed positive about hiring new people.

It was a 3 phased process. First, a phone interview, then they invited me for an in-person meeting. After that, I had a sit-down with the GM for a formal interview, and the owner did the final interview. I got a phone response back for the official offer, and then there was the long wait for the start date.

I sat down with the manager for a chat. Most of the talk was about my past work in restaurants, but I didn't have any, which I'm guessing is why I didn't get the job.
